RSPH Level 2 Award in Food Safety for Manufacturing

This is a qualification that covers the basic principles of food hygiene for food operatives working in the food and drink manufacturing industry. Holders of qualifications based on this specification will have a knowledge and understanding of; the importance of food hygiene, associated food hazards, good hygiene practice and controls based upon an awareness of food safety management systems.
These topics are regarded by the Food Standards Agency as being important to understanding and maintaining good practice in the handling, processing and preparation of safe food.

Syllabus Outline

 The course includes:

  • Food poisoning
  • Bacteriology
  • Prevention of contamination and food poisoning
  • Personal hygiene
  • Premises, equipment and pest control
  • Cleaning and disinfection
  • Legislation

Learning Outcomes

To achieve this qualification a candidate must:

1. Explain how individuals can take personal responsibility for food safety, by being able to:
Outline the importance of food safety procedures
Report food safety hazards, infestations and food spoilage
Review the statutory requirements of food businesses and food operatives.

2. Describe how to keep him/herself clean and hygienic, by being able to:
Explain the importance of personal hygiene in food safety
Describe effective personal hygiene practices

3. Describe how to keep the working area clean and hygienic, by being able to:
Explain the importance of keeping the work area and equipment clean and tidy
State the importance of waste disposal
Outline the importance of pest control.

4. Explain how to keep the product safe, by being able to:
State the risk to food safety from contamination and cross contamination
Demonstrate an awareness of food poisoning
Describe food handling practices and procedures
Outline the importance of temperature control
Describe stock control
Recognise spoilage

Course Duration: 1 Day

Final Test: 30 multiple choice questions. The pass mark is 20/30. The duration of the examination is 40 minutes

Certification: The Royal Society for the Promotion of Health

Refresher Course: It is recommended that a refresher course is undertaken every 3 years.
